A MESSAGE FROM OUR PRESIDENT, MICHELLE T All I want for Christmas is a can of fruit! No I haven’t lost my mind, and I lost my two front teeth several years ago so I don’t need them replaced this year. What I said is true, I’ll take peaches, pears, applesauce, mandarin oranges, pineapple, fruit cocktail, cherries; basically any member of the fruit family that has been canned is on my Christmas wish list. Last Tuesday night I had the wonderful opportunity to work on behalf of JWCL for Interfaith Relief. Linda S, Nicole H, Cindy S, Cheryl K and myself showed up ready to stock shelves; little did we know that we were about to have a much more rewarding experience. Interfaith Relief is an interdenominational project sponsored by Loudoun County churches and community volunteers. They provide three days of emergency food to any family in need that can prove Loudoun County residency. There are five shifts each week, and they supply an average of 30 – 50 families each shift. Last Tuesday night we selected and packed three days worth of groceries for 27 families (120 individuals) amounting to 967 pounds of food. Each family member is provided with three servings of breakfast, lunch and dinner. We had a hard time when it came to selecting lunches for the families. A lunch consists of a main dish (peanut butter and bread, macaroni-n-cheese, or lunchmeat and bread for example) and a fruit. The only fruit available were bags of old apples, most of which were extremely bruised and beginning to rot. I personally didn’t even want to touch most of the apples much less eat them. The director of the distribution center, Wanda Moloney, told us that they are always very low on fruit. She actually felt lucky to have the apples that we were giving out that evening. Each of us that volunteered on Tuesday were touched by the experience. I was reminded yet again to count my blessings during this holiday season. So here is what I am asking of you, help me make my Christmas wish come true! I want to fill the shelves of the Interfaith Distribution Center with canned fruit. Please bring a donation of canned fruit (a can, two cans, a six-pack of applesauce cups, a case from Costco, or whatever you feel led to donate) to our Ladies Night Out next Tuesday night. I will provide a large gift wrapped box in which we can transport the cans to Interfaith Relief. Let us take this opportunity as we are gathering to reflect on a year of service to once again share our blessings with the community that we serve. Thank you and to each of you my personal wishes for a warm and meaningful holiday season for you and yours. Silent Auction Thank You Fellow club women I wanted to publicly thank each of you that worked to make our first silent auction such a huge success. And just to let you know that our efforts are being noticed I have included a copy of an e-mail I received from the current GFWC Virginia President – Mrs. Linda B. Great Work!
A MEMBERSHIP MESSAGE FROM HEATHER M, second vice president Congratulations to our new members, Shannon L, Kim F, and Erin O! They were all initiated at our November meeting. We want to welcome everyone who visited our November meeting and Silent Auction! We had a great evening and hope to see you all again soon! Dont’ forget our December Ladies Night Out this Tuesday, December 14, at the River Creek Club. We will be meeting at 7:00 for drinks and visiting, then beginning our meeting and dinner at 7:30. We are in the process of planning our Membership Dessert to be held in February. Please begin thinking about friends and neighbors who may be interested; we will ask that each club member give us at least 3 names of people to invite. We will need the names and addresses of invitees by December 21. Thanks! HOLIDAY SILENT AUCTION FUNDRAISER: The Holiday Silent Auction was a huge success thanks to YOU! Club members were so generous to donate items, solicit donations and/or bid on items! In total we were able to raise $1869 for Camp Easter Seals Virginia (well exceeding our initial goal of $300!!). ********************************************************************************** Triple – Chocolate Cake with Chocolate Peppermint Filling – Michelle T After serving this at the December Board meeting I had several requests for this recipe which I adapted from a recipe in the December 2001 issue of Bon Appetit. Enjoy! Filling 8 ounces of imported milk chocolate (Lindt) finely chopped ˝ cup whipping cream 1 tablespoon light corn syrup ˝ teaspoon peppermint extract Cake I use a boxed chocolate cake mix and add 1 ˝ cup of miniature semisweet chocolate chips to the batter. (Bon Appetit uses a chocolate cake made from scratch – but mine still turns out great!) Chocolate Glaze 8 ounces bittersweet chocolate finely chopped ˝ cup unsalted butter cut into pieces 1 tablespoon light corn syrup ľ teaspoon peppermint extract Garnish: Whole peppermint hard candy For filling: Place chocolate in medium bowl. Bring cream and corn syrup to a simmer in a small saucepan. Pour hot mixture over chocolate: add extract and let stand one minute. Whisk until mixture is smooth. Let filling stand at room temperature while cake is baking a cooling For cake: Mix (add in 1 ˝ cups of mini choc. chips to the batter) and bake cake according to directions on box. You will need two round cake layers – use either spring form pans or parchment paper to line the cake pans (make sure to grease pans). Cool cake in pan on rack for 5 min. Turn out cake onto rack. Allow cake to cook completely. Once cake is cool Use an electric mixer to beat filling until it is fluffy and lightened in color. Spread filling over top of one layer then top with second layer. Chill filled cake 20 minutes. Prepare the Glaze: Stir chocolate, butter and corn syrup in heavy small saucepan over low heat until melted and smooth. Mix in extract. Cool glaze until just lukewarm but still pourable, stirring occasionally, about 20 minutes. Pour ˝ cup glaze over center of cake. Spread over top and sides of cake. Chill until glaze sets, about 15 minutes. Pour remaining glaze over center of cake, and then spread quickly over top and sides. Chill until glaze sets, about 1 hour. (Cake can be made one day ahead. Chill overnight. Allow cake to stand at room temperature until softened, about 4 hours) Top cake with peppermint candy prior to serving
Pumpkin Cheese Spread by Lisa A (Lisa made this for us at the October meeting and wow was it good!)
First Layer 12 oz. cream cheese ˝ can of pumpkin ˝ pkt. of Dream Whip Some fresh lemon juice and some lemon zest Confectioners sugar (how ever much you like depending on how sweet you want it) Pumpkin Pie Spice (to taste)
Topping Layer ˝ Cup Sour Cream A little more canned pumpkin Confectioners sugar (to taste) Pumpkin Pie Spice (to taste) Lemon Zest A drop or two of Orange food coloring (if you wish) Top with toasted hazelnuts (or your favorite)
Serve with cinnamon bagel chips or whole wheat crackers – enjoy!
